The Food and Meal
Quail Harvest serves breakfast, lunch and
supper keeping you happy before anad after a great day of quail hunting. Quail Harvest
Plantations provides
meals that include some of the best southern cooking you
have ever had. It
is not uncommon for our guests to ask for the recipe on one
or two of the fabulous dishes served for breakfast lunch or
dinner. We also
provide kitchen facilities and grills if you and your party
would prefer to do you own cooking.
Grilled Quail
2 quail
1 tablespoon peanut oil
3 tablespoons butter
1/2 bay leaf
Salt
Freshly ground black pepper
Thin sheets of fresh pork fat
1 cup bread crumbs
1 cup Game Stock
Split the birds open, and flatten them a little. Heat the oil and the butter in
a casserole and brown the birds in it. Add the bay leaf, season with salt and
pepper, cover the birds with the sheets of pork fat, and simmer for about 5
minutes.
Remove the quails. Dip them into the bread crumbs, broil or grill them for about
3 minutes on each side, and put them on a hot serving dish. Add the stock to the
pan juices in the casserole, bring to the boiling point, and strain the sauce
into a sauceboat. Serves 1.
Baked Quail
6 Or more quail
18 sl Bacon or salt pork
1 tb Butter
Stuffing; if desired
Draw and dry pluck the birds. Cover high exposed surfaces with bacon or
salt pork around bird. Melt butter in skillet, put in quail and bake in a
hot oven for about 5 minutes. Reduce heat to about 350° and bake another 15
minutes. If birds are stuffed, bake 20 minutes.
